All tea comes from the leaves of the Camellia sinensis plant. The styles of tea are produced by altering the shape and chemistry of the leaf, called 'processing' or 'manufacture.’  Tea is generally broken up into six main categories, five of them depending on their oxidation (fermentation) level. The main varieties are green tea, yellow tea, white tea, blue tea (Oolong), black tea, and dark tea.
